What Is A Hollow Ground Santoku Knife?
If you've ever had the pleasure of using Asian knives before than you are certainly aware that the Japanese style Santoku knife is one of the most useful knives that you will ever own.The word Santoku when translated to English literally means "three virtues" or "three uses" which refers to the fact that Santoku knives are designed for slicing, dicing and mincing.A Santoku knife is comparable to a Western style Chef's knife.In case you don't know, a Chef's knife is a style of knife that is usually 8 inches long and features a slightly curved blade.The curve in the blade promotes the 'rocking' motion which is why Chef's seem to be able to cut stuff so fast.The big problem with the Chef's knife design is the fact that food sticks to the blade.That's where the Santoku knife comes in.It has little divots cut vertically into the blade.These little scallops prevent food from sticking to the blade which in turn allows you to slice faster.There has also been a design which many consider the holy grail of kitchen knives.That is a design that takes the best parts of a Chef's knife and fuses it with the best parts of a Santoku knife.What you end up with is a knife that promotes the rocking motion and where food doesn't stick to it's blade either.In order to achieve this the basic idea has been to basically take the curve of a Chef's knife and apply it to a Santoku knife.The curve is essential for 'rocking' and the Granton edges ensure that food falls off instead of sticking to it.There are also several different grinds that a Santoku knife can have as well.One of the popular ones is known as the hollow edge grind.Basically, instead of a flat point, the edge is actually a little concave.Straight razors use this grind as a for instance.This type of grind gives you an extremely sharp edge; however, it is very weak so you'll need to use a steel to keep it true.The Pure Komachi 2 Series Hollow-Ground Santoku Knife uses this grind.So, now you know a different type of knife that is extremely useful in the kitchen.Look for a cross between a Chef's knife and Santoku knife with a hollow edge grind and you'll have an extremely sharp knife that is perfect for any task you use it for.
